American Colonial women used to line baking pans with rose geranium leaves to impart rose aroma and flavor to their cakes.   Discriminating bakers today still include scented geranium for lending a sophisticated touch to their recipes.  The leaf essence (allowing leaves to steep in a light sugar syrup) can also be added to ice cream or other frozen desserts such as sorbet or granita, a type of Italian ice.
